Chef picking mintWhen we say ‘flavour of the month’, it’s actually the flavour of most months!

Our Pea and Mint soup makes a regular appearance on our restaurant menu and is a sure-fire winner with both our regular diners and our hotel guests.

The mint is grown on our very own patios and picked daily by the chefs to use in a variety of delicious dishes – not just our soup!Of course, it’s all about the taste and one of its unique qualities is the crispness that the fresh mint carries through.

This is how we make our soup and it’s absolutely delicious. Why not have a go yourself!

Ingredients:

500g garden peas

1 litre vegetable stock

1 white onion

3 tsp of freshly chopped mint

1 tsp fresh garlic

Method:

  • Sweat the onions, garlic and peas in a pan, then add the mint & vegetable stock.  Leave it to simmer for about 30-40 minutes
  • Blend the soup and pass through a sieve
  • Put back onto the stove for a further 5 minutes to reduce to give more of an intense taste
  • You’re ready to serve. Finish it off by topping with a fresh chopped mint to garnish
